Blue Cheese Filled Beef Burger
(serves 7 -8 )

Ingredients
Beef patty:
700g minced beef
2 red onions - diced
4 cloves garlic - finely diced
1 tablespoon crushed chili flakes
1/2 tablespoon ground coriander seeds
1/2 tablespoon ground fennel seeds
2 tablespoons tomato ketchup
2 tablespoon soy sauce
1 teaspoon coarsely ground black pepper
1 egg
2 - 3 tablespoons oil
2 packets blue cheese
salt
Additional ingredients:
2 large yellow onions, sliced
1 large french loaf, sliced to 3/4 inch thick
lettuce
tomato - sliced
mayonnaise
Thai chili sauce
Oil to caramelize the onions
Butter
Optional : beef bacon
Method
Beef patty:
700g minced beef

1/2 tablespoon ground coriander seeds
1/2 tablespoon ground fennel seeds
2 tablespoons tomato ketchup
2 tablespoon soy sauce
1 teaspoon coarsely ground black pepper

2 - 3 tablespoons oil
2 packets blue cheese

1 large french loaf, sliced to 3/4 inch thick
lettuce
tomato - sliced
mayonnaise

Method
- Mix all the ingredients for the beef patty, except for the blue cheese and salt in a bowl and then refrigerate for at least half an hour. The longer the better.
- In the meantime, heat some oil in a skillet and toss in the sliced onions. Fry until wilted and golden brown. Set aside as a condiment.
- When ready to grill the beef patty, take a handful of the meat mixture and shape into a ball. Flatten it slightly then press in the middle to make an indention. Crumble some blue cheese (note: blue cheese has a very strong flavour) inside the indention and then shape it back into a ball and flatten to about 1/2 an inch thickness.
- Heat a griddle pan then drizzle some oil on the pan. Once hot, sprinkle some salt on top of the burger patty then place the salted surface side down on the pan. Let it brown for about 3 to 4 minutes then spinkle some more salt on the surface facing upwards then flip the patty over to that side and continue grilling for another 2-3 minutes.
- You may grill it longer to make sure that the beef is properly cooked or heat the oven to 180 degrees celcius and finish the grilling in the oven for another 3 to 4 minutes then let it rest before assembling. Continue until you have used up all the beef mixture.
- Spread some butter on one side of the sliced loaf and toast it on the griddle pan until golden brown. Buttered side to face each other when assembling.
- To assemble put all the remaining additional ingredient on top of a slice of the toasted bread with plenty of mayo, chili sauce and caramelized onions then enjoy!
