Buttermilk Buns (V) (G)
Makes 16 buns
For the filling:
Ingredients
160g sugar
160g butter, softened
80g all purpose flour

For the sweet buns:
Ingredients
1/2 cup warm water
1/2 cup milk
1 egg
1/3 cup butter, melted
1/3 cup white sugar
3 3/4 cup white bread flour
2 1/2 teaspoons instant yeast
1/4 cup butter, softened
2 tablespoons butter, melted
2 tablespoons golden syrup
oil for greasing

Method
- Mix all of the ingredients using a mixer or just a fork until they have incorporated. Refrigerate until ready to be used.
For the sweet buns:

1/2 cup warm water
1/2 cup milk
1 egg
1/3 cup butter, melted
1/3 cup white sugar
3 3/4 cup white bread flour
2 1/2 teaspoons instant yeast
1/4 cup butter, softened
2 tablespoons butter, melted
2 tablespoons golden syrup
oil for greasing
Method
- Dissolve the sugar with the warm water in a bowl then mix in the yeast. Leave it for 10 minutes to bubble.
- Whisk the egg, milk and 1/3 cup of the melted butter in another bowl then mix in with the yeast mixture. Add flour and keep on mixing with a wooden spatula. Once combined transfer the content onto a floured surface to start kneading.
- Knead the dough and add in more flour as needed until the dough becomes more elastic, less sticky and smoother (bounces back when you press on it).
- Grease a large bowl with oil and place the dough in the bowl, covered with cling film or damp towel for 1 1/2 hours or until it doubles in size.
- Once it has doubled in size, punch down on the dough then roll the dough to form a long but thick cylinder. Cut into 16 equal portions and roll them into small balls.
- Press in the middle of the ball using your thumb to create a small indentation for you to place the filling in. Scoop in about 1 teaspoon of the filling then pinch the dough to close the hole. Repeat until you have filled all the balls.
- Grease a roasting pan using the softened butter.
- Arrange the dough closely(about 1/2 inch gap between one another) in the greased roasting pan. Leave them to rise again for another 45 minutes to 1 hour.
- Preheat the oven to 175 degrees Celcius. Brush the top of the buns with the melted butter and place the pan in the oven. Bake for 20 to 25 minutes.
- Once you have taken it out of the oven, glaze the top with the golden syrup.
- After about 10 to 15 minutes out of the oven, you could try and remove the buns from the roasting pan and transfer them to a cooling wire rack to cool completely.
