Durian Crepes
Durian Crepes is the most popular Malaysian craze to date. The most common type of Durian crepes found around is the crepes (thin pancake) filled with whipped cream and Durian flesh, however this is a slightly different version as it uses Durian infused custard cream filling.
Ingredients
Crepes:
1 cup all purpose flour
3/4 cup milk
1/2 cup water
2 large eggs
3 tablespoons melted butter + extra for frying
2 tablespoons sugar
1 teaspoon vanilla essence
Filling:
1 cup milk
1 cup whipping cream
1/2 cup sugar
3 egg yolks (lightly whisked)
10-12 durian flesh
1 cup whipping cream
3 tablespoons icing sugar
1 teaspoon vanilla essence
Method
Crepes:
1 cup all purpose flour

Method
- Crepes: Combine all ingredients for the crepes in a bowl, whisk until all is well incorporated then refrigerate for 1 hour.
- Melt a bit of butter in a small non-stick pan on low/medium heat, pour about a ladle of the batter into the pan and swivel the pan to ensure that the batter spreads evenly.
- Once it can be lifted easily off the pan and cooked until the surface facing upwards, remove the crepes from the pan. Do not flip and cook the other side of the crepe. This smooth surface will be the outer skin of the crepe when filling it later on.
- Continue these steps until you have finished the batter.
- Filling: Remove the durian flesh from the seed
- Put in the durian and milk in a blender then blend until smooth (or coarse if you still want some texture)
- Pour the milk and durian mixture into a pot and add 1 cup of cream and sugar
- Cook on low heat then once it starts to simmer, turn off the heat
- Spoon in the hot mixture one tablespoon at a time into the bowl with egg yolks and whisk to combine.
- Continue until the egg yolks mixture becomes warm/hot then pour it back into the pot and turn on the heat
- Cook the custard on low heat until it thickens. Leave it to cool. You may also cool it in an ice bath/refrigerator.
- Beat the remaining one cup of whipping cream with sugar and vanilla essence until stiff peaks.
- Once the custard has cooled then fold the whipped cream into the custard mixture just until combined.
- Spoon in about a tablespoon of the filling in the middle of the crepes then fold the right and left side in followed by the edge closest to you then finish the folding with the remaining edge to make a rectangular shape. Serve immediately.

3 sudu besar mentega yang telah dicairkan + lebih utuk menggoreng
2 sudu besar gula pasir
1 sudu teh esen vanilla
Inti:
1 cawan susu
1 cawan krim
1/2 cawan gula
3 biji kuning telur (dipukul sedikit)
10-12 ulas durian
1 cawan krim
3 sudu besar gula icing
1 sudu kecil esen vanilla

Cara-cara
- Crepes : Campurkan kesemua bahan ke dalam mangkuk dan pukul sehingga sebati kemudian sejukkan di dalam peti sejuk selama sejam.
- Cairkan sedikit mentega di dalam kuali non-stick kemudian tuangkan satu senduk adunan crepes tadi ke dalam kuali dan pastikan adunan tadi rata.
- Apabila crepes telah masak sehingga ke permukaan atas dan boleh di angkat daripada kuali tanpa melekat, alihkan crepes ke atas pinggan. Jangan terbalikkan dan masak permukaan atas tadi. Permukaan atas yang licin ini akan menjadi kulit luar crepes apabila diisi dengan inti nanti.
- Teruskan langkah-langkah di atas sehingga telah habis semua adunan tadi.
- Inti : Asingkan isi durian daripada bijinya
- Masukkan isi durian, susu, 1 cawan krim dan gula ke dalam pengisar. Kisar sehingga halus.
- Masak adunan dalam periuk atas api kecil/sederhana kemudian apabila telah menggelegak, matikan api.
- Masukkan satu sudu besar adunan yang panas tadi ke dalam mangkuk berisi kuning telur dan gaulkan sehingga sebati.
- Ulangi sehingga beberapa sudu dan adunan telur tadi berasa suam/panas kemudian tuangkan adunan telur tadi ke dalam periuk berisi krim dan susu yang panas tadi.
- Hidupkan api semula dan terus kacau adunan sehingga pekat. Setelah pekat, kastard ini boleh disejukkan sama ada dalam air ais atau pada suhu bilik kemudian disejukkan dalam peti sejuk.
- Sementara menunggu kastard itu sejuk, pukul lagi satu cawan krim bersama gula icing dan esen vanilla sehingga kembang.
- Apabila kastard telah sejuk, campurkan krim yang telah kembang tadi ke dalam adunan kastard dan adunkan menggunakan teknik kaup balik.
- Cedukkan lebih kurang satu sudu besar (bergantung pada saiz crepes anda) kastard dan letakkan di tengah-tengah crepes. Lipatkan sisi kiri dan kanan crepes, diikuti dengan sisi yang berdekatan dengan anda dan akhir sekali lipatkan sepeti sampul surat.
- Makan segera atau sejukkan dalam peti sejuk.
