BROCCOLI SALAD  (V)*  (H) (D)
(Adapted from Alyson's Broccoli Salad)

Ingredients

10 slices of beef bacon
1 head of fresh broccoli, cut into small florets
1/4 cup red onion, chopped
1/2 cup grapes, halved
3 tablespoons white vinegar
2 tablespoons white sugar
1 cup mayonnaise
1 cup slivered almonds, toasted


Method (IMPORTANT: to be made the night before it is served)

  • To make the dressing, combine the mayonnaise, sugar and vinegar in a bowl and chill.
  • Fry the beef bacon slices in a skillet without any oil, until brown. Set aside and once cooled, chop into bite size pieces.
  • Combine the broccoli florets, onion, grapes and half of the beef bacon in a large bowl.
  • Pour the mayonnaise into the bowl and toss everything until coated with the dressing. Keep refrigerated until ready to be used the next day.
  • Before serving, mix in the remaining beef bacon and toasted almonds for a nice crunch. 

*(V) - for a vegetarian version, simply omit the beef bacon
