EDAMAME BEANS SALAD (V)* (H) (D)
(Serves 1)
Ingredients
1 cup frozen edamame beans
1/2 cup beansprouts, tails removed if you prefer
2 - 3 chives
1/2 small shallot, thinly sliced
1/2 teaspoon fish sauce
1/2 teaspoon sweet soy sauce
2 - 3 drops of sesame oil
1teaspoon lemon juice/rice vinegar
1/4 teaspoon honey
1 cup frozen edamame beans
1/2 cup beansprouts, tails removed if you prefer

1/2 teaspoon fish sauce
1/2 teaspoon sweet soy sauce
2 - 3 drops of sesame oil
1teaspoon lemon juice/rice vinegar
1/4 teaspoon honey
Method
*(V) - For a vegetarian option, replace the fish sauce with salt and pepper according to your taste
- Cook the edamame beans in boiling water for 2 to 3 minutes then immediately shock them in cold water. Drain off any excess water.
- Blanch the beansprouts and then drain.
- Cut the chives to about 1 inch length.
- Toss all the vegetables in a bowl.
- In a small bowl, combine the fish sauce, soy sauce , lemon juice and honey. Mix well.
- Pour the dressing over the vegetables and then add a few drops of sesame oil. Toss everything together and serve with grilled fish or just enjoy it on its own!
