SAVORY MUFFINS (G) (V)
(twin brothers of sweet muffins!)
Makes 10 large muffins
Ingredients
2 cups self raising flour
1 cup grated cheese (cheddar or mixture of Cheddar & Parmesan or crumbled Feta etc)
125g melted butter
2 tablespoons chopped chives/parsley/spring onion
1/2 teaspoon salt
1 cup milk
1 egg lightly beaten
1/2 cup diced/caramelized onions
Methods
Best enjoyed when still hot. Try adding some chopped vegetables (e.g carrots, broccoli, red pepper, peas etc) and meat (e.g chicken pieces, sausages, beef bacon, etc). This will make a nice snack for your children's (and adult's) lunch box. For breakfast, try these with some baked beans on the side!
