CUSTARD (G) (V)
Ingredients
1 cup milk
1 cup cream
4 egg yolks
1 tablespoon cornflour
1/3 cup caster sugar
1 tablespoon vanilla extract

_Method
- Combine milk and cream in a saucepan and cook on low heat until bubbling around the edges then take it off the heat.
- In a heat proof bowl, combine the egg yolk, sugar and cornflour until well combined. Then add 1tbspn of the the milk and cream mixture at a time and keep stirring until you have mixed in about 1/3 of the cream mixture.
- Pour the egg yolk mixture into the saucepan containing the remaining cream and return it to low heat. Keep stirring.
- Cook or about 10 to 15 minutes until the mixture thickens that it coats the back of your spoon.
- Take the saucepan off the heat and stir in the vanilla extract.
- To stop it from cooking, place the pan in a water/ice bath.
- If you notice any curdles in the custard, strain it using a fine mesh strainer.
