Leek, Onion & Cheddar Cupcakes with Tomato Cream Cheese Frosting

This was inspired by the general umbrella term of 'cupcake' from the Masterchef Malaysia 2 which aired on 13 October 2012, the contestants were required to bake a cupcake as their challenge. Although cupcakes are commonly known as a sweet dessert item, it does not have to be limited to that - savoury cupcakes could be surprisingly good too!
Ingredients
Cupcake:
1 cup plain flour
1 teaspoon baking powder
1 teaspoon baking powder
3/4 cup grated cheddar cheese
1/2 cup melted butter
1/4 cup vegetable oil
1/4 cup milk
2 eggs, lightly beaten
5 baby leeks, chopped to 1/4 inch thick
1/2 yellow onion, finely diced
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon chili powder
1/4 teaspoon salt
1 teaspoon butter
salt and pepper
Frosting:
200g cream cheese, room temperature
2 tablespoons tomato ketchup
1 teaspoon mayonnaise
pinch of salt
2 slices beef bacon, fried then cut into small pieces
Spring onion, chopped
Chili powder
Method
Cupcake:

1/2 teaspoon coarsely ground black pepper

1/4 teaspoon salt
1 teaspoon butter

200g cream cheese, room temperature
2 tablespoons tomato ketchup
1 teaspoon mayonnaise
pinch of salt
2 slices beef bacon, fried then cut into small pieces

Method
- Heat the oven to 180 degrees celcius and line the muffin tin with paper cups.
- Sieve the flour with the baking powder and baking soda. Add the 1/4 teaspoon of salt, 1/2 teaspoon of black pepper and chili powder to the flour mixture, stir then set aside.
- In a frying pan, heat the 1 teaspoon of butter with a little oil then stir in the chopped leeks. Fry until wilted, season with salt and pepper. Leave it to cool.
- In a small bowl, mix the melted butter, oil, eggs and milk together.
- Make a well in the flour mixture then pour the oil ingredients into the well. Stir until combined.
- Add the cooked leeks, onion and cheddar cheese mix until combined
- Spoon the batter into the paper cups, about 3/4 full.
- Place in the oven and bake for 15 to 20 minutes of until toothpick inserted in the middle comes out clean.
- To make the frosting, whip the cream cheese with tomato ketchup, mayonnaise and salt.
- Pipe the frosting on top of the cooled cupcakes then dust with chili powder and sprinkle with chopped spring onion and beef bacon pieces.
