Tuna with Wholewheat Pasta Salad (D) (H)
Serves 4
Healthy, filling and easy salad, perfect for lunch or dinner.
Ingredients
1 cup uncooked wholewheat pasta of your choice (I used penne)
6 closed cup/button mushrooms, cleaned and sliced
1/2 cup julienne carrots
1/4 cup onion, sliced
1/4 cup salad onions, chopped
2 cans of tuna in oil or water, drained and flaked
1/3 cup mayonnaise
1/2 tablespoon lemon juice

pepper
2 tablespoon olive oil
Method

2 tablespoon olive oil
Method
- Cook your pasta in enough water and salt until al dente. Drain, wash with cold water, drain again and set aside.
- Heat 1 tablespoon of olive oil in a pan and saute the onion and mushroom slices until cooked. Lightly season with salt and pepper then set aside.
- Mix all the ingredients except mayonnaise, lemon juice and salt & pepper in a large bowl.
- Combine the lemon juice and remaining olive oil with the mayonnaise and mix well.
- Toss everything together then season with salt and pepper.
- Best enjoyed cold. You could add in more vegetable such as peppers, broccoli, peas etc to make it a more wholesome meal.
